  1. Make the rub by combining 2 tablespoons brown sugar, 2 tablespoons chili powder, balsamic vinegar, and cayenne in a food processor and then pulsing until the mixture comes together into a paste. Rub the paste over the pork ribs and refrigerate for at least 2 hours or overnight.
  2. Now it’s time to braise the ribs in beer. Place the ribs in a large pot and then pour in the beer. Make sure the ribs are not totally covered or submerged. Bring the mixture to a boil, and then reduce the heat to medium-low. Simmer the ribs, covered. Turn the ribs from time-to-time and let it stew from 45 minutes up to an hour. Remove the beer.
  3. To make the coffee-chili glaze, add the cider vinegar, 1 cup of brown sugar, coffee, 2 tablespoons of chili powder, and the chili-garlic sauce into a pan. Bring to a boil and then reduce the heat so the sauce simmers and thickens. Reduce the liquid until it is half its original volume. This will take around 5 – 6 minutes.
  4. Preheat the grill to medium-low. While it’s heating up, brush the ribs with the glaze. Oil the grid and then the ribs. Turn and baste often until the ribs are nicely glazed, about 12 minutes.

  2. Rub the mixture on both sides of the lamb chops and marinate them in the fridge for an hour.
  3. Remove the lamb chops and let them come to room temperature. This can take up to 20 minutes.
  4. Prep the grill pan by heating it over high heat until it is smoking. Place the lamb chops on the grill and sear for 2 minutes. Turn the chops over and cook for 3 minutes for medium-rare or 3 and a half minutes for medium-done.

  5. You can add more Worcestershire sauce or pepper to taste.

  1. Preheat the grill to medium heat.
  2. Cut heavy duty tin foil into 4 sheets. In each sheet, place a chicken breast. Surround each piece of meat with a portion of pineapple and chopped vegetables.
  3. In a separate bowl, mix the barbecue sauce, the pineapple juice from the can, soy sauce, and garlic. Brush the chicken with 2 tablespoons of the sauce. Reserve 1/4 cup of the mixture.
  4. Put the packets on the grill and make sure to cook each side for 7 minutes.
  5. Open the packets and garnish with the green onions. Serve with the reserved marinade.
