Summer BBQ Grub That’ll Make Your Guests Ask For Seconds
1. Chili-Espresso Ribs

Serve your guests an interesting take on the typical ribs with this recipe featuring a spicy kick.
Ingredients:
- Pork back ribs, 1.5 kgs
- Chili powder, 1/4 cup
- Balsamic vinegar, 2 Tbsp.
- Brown sugar, 2 Tbsp.
- Cayenne powder, 1 Tbsp.
- Salt, 1 tsp
- Pale ale beer, 2 bottles
- Cider vinegar, 1 cup
- Brown sugar, 1 cup
- Instant coffee granules, 1/4 cup
- Chili-garlic sauce, 2 Tbsp.
Instructions:
- Make the rub by combining 2 tablespoons brown sugar, 2 tablespoons chili powder, balsamic vinegar, and cayenne in a food processor and then pulsing until the mixture comes together into a paste. Rub the paste over the pork ribs and refrigerate for at least 2 hours or overnight.
- Now it’s time to braise the ribs in beer. Place the ribs in a large pot and then pour in the beer. Make sure the ribs are not totally covered or submerged. Bring the mixture to a boil, and then reduce the heat to medium-low. Simmer the ribs, covered. Turn the ribs from time-to-time and let it stew from 45 minutes up to an hour. Remove the beer.
- To make the coffee-chili glaze, add the cider vinegar, 1 cup of brown sugar, coffee, 2 tablespoons of chili powder, and the chili-garlic sauce into a pan. Bring to a boil and then reduce the heat so the sauce simmers and thickens. Reduce the liquid until it is half its original volume. This will take around 5 – 6 minutes.
- Preheat the grill to medium-low. While it’s heating up, brush the ribs with the glaze. Oil the grid and then the ribs. Turn and baste often until the ribs are nicely glazed, about 12 minutes.
2. Summer BBQ Grilled Lamb Chops
Fancy up your summer BBQ party by foregoing the usual pork for lamb chops. Prepare for a much more distinctive taste when you grill this meat.
Ingredients:
- Lamb chops, 6 pieces
- Garlic, 2 large cloves
- Fresh rosemary leaves, 1 Tbsp.
- Cayenne pepper, 1 tsp
- Coarse sea salt, to taste
- Extra virgin olive oil, 2 Tbsp.
Instructions:
- Combine the garlic, thyme, rosemary, cayenne, and salt in a food processor and then pulse until mixed. Add olive oil and pulse until the ingredients form a paste.
- Rub the mixture on both sides of the lamb chops and marinate them in the fridge for an hour.
- Remove the lamb chops and let them come to room temperature. This can take up to 20 minutes.
- Prep the grill pan by heating it over high heat until it is smoking. Place the lamb chops on the grill and sear for 2 minutes. Turn the chops over and cook for 3 minutes for medium-rare or 3 and a half minutes for medium-done.

Real men serve steaks at their summer BBQ get-togethers. Here’s a recipe sure to be a crowd-pleaser.
Ingredients:
- Rib-eye steaks, 4 pieces
- Softened butter, 1 stick
- Large yellow onion, 1 piece, sliced
- Heavy cream, 1 cup
- Worcestershire sauce, 4 Tbsp.
- Blue cheese, 3/4 cup, crumbled
- Freshly ground pepper and salt to taste
Instructions:
- Preheat the grill to high heat.
- Rub the steaks with salt and pepper and then with half a stick of butter.
- Put the steaks on the hot grill and turn after 3 – 4 minutes. Cook the other side for 4 minutes. Remove the steaks and put them on a plate.
- It’s time to make the blue cheese and onion sauce. Melt the remaining butter in a skillet over medium-high heat. Toss in the onions and saute until golden brown. Add the heavy cream, the salt and pepper, and the Worcestershire sauce. Once the mixture bubbles up, add the cheese and allow it to melt and combine with the sauce.
- You can add more Worcestershire sauce or pepper to taste.
- Serve up the steaks with some sauce spooned over the top.
4. Hawaiian Barbecue Chicken in Foil

Hawaii is a place seemingly made out of summer dreams, and Hawaiian cuisine gives you a little taste of that magic. Since this chicken dish is inspired by Hawaii, expect some pineapple in the picture.
Ingredients:
- Boneless chicken breasts, 4 pieces
- Barbecue sauce, 1 cup
- Pineapple slices, 1 15-ounce can, keep the juice
- Soy sauce, 2 tsp
- Red bell pepper, 2 medium pieces, cubed
- Zucchini, 2 pieces, sliced
- Green onions, for garnish
Steps:
- Preheat the grill to medium heat.
- Cut heavy duty tin foil into 4 sheets. In each sheet, place a chicken breast. Surround each piece of meat with a portion of pineapple and chopped vegetables.
- In a separate bowl, mix the barbecue sauce, the pineapple juice from the can, soy sauce, and garlic. Brush the chicken with 2 tablespoons of the sauce. Reserve 1/4 cup of the mixture.
- Put the packets on the grill and make sure to cook each side for 7 minutes.
- Open the packets and garnish with the green onions. Serve with the reserved marinade.

Ingredients:
- Pork sausages, 4 fresh links
- Lager beer, 2 12-ounce bottles
- Hoagie rolls
- Pepper and sweet onion relish
Instructions:
- Preheat the grill to medium-high.
- Put sausages and beer in a Dutch oven and bring to a boil.
- Let them stand for 10 minutes so the sausages stew in the beer.
- Cut a 1/2-inch wedge from the top of each hoagie roll. You can save the wedges and reserve them for another purpose.
- Cut each hoagie roll half, crosswise.
- Now you can grill the sausages, covered, in 350-400 degree Fahrenheit heat for 8-10 minutes on each side. The length of time depends on your preferred doneness.

6. Grilled Asian Salmon

Ingredients:
- Salmon, 4 boneless fillets with skin on
- Teriyaki sauce and marinade
- Salt
- Pepper, freshly ground
- Green onions, 6 bulbs
- Sesame seeds, toasted
- Cilantro, for garnish
Instructions:
- Preheat the grill to medium-high heat (around 375 degrees Fahrenheit).
- Place the salmon fillets onto a baking sheet lined with parchment paper.
- Season the salmon fillets with salt and pepper.
- Grill the salmon fillet with the grill lid closed, making sure they are not fully cooked through. This will take around 18 – 20 minutes.
- After a few minutes, open the salmon and brush with the teriyaki marinade. Cover the grill again. Cook for 5 more minutes.
- Remove the salmon from the grill and brush with the sauce again.
- Now, put the green onions on the hot grill and sear them for 2 – 3 minutes.
- Sprinkle the toasted sesame seeds and cilantro on the salmon. Serve with the seared green onions.
