7 Halloween Recipes for a Monster Feast This Fall

 

1. Autumn Slaw

You can start the festivities with this slaw or serve as a side to your meat dishes. The seasonal vegetables are the stars of this dish.

1. Make the slaw. Mix the broccoli, beet, carrots, radish, apple, red onion, and sunflower seeds in a large bowl. You can use a mandolin to cut the vegetables or use a food processor if you want to prep the slaw ingredients faster.

2. Do the dressing. Combine the tahini, apple cider vinegar, lemon, salt and pepper, and olive oil in a mixing bowl. Thin the mixture with some water if you find the flavor too strong.

3. Toss the slaw. Sprinkle the dressing on the slaw and toss it together. Put the slaw in the refrigerator for at least 2-3 hours, or at most overnight, and serve.

2. Fig, Apple and Brie Grilled Cheese Sandwiches

3. Cook your grilled cheese sandwich. Preheat a griddle or skillet pan on high heat. Place the bread with the butter-side down first in the pan. Wait for 2-3 minutes and then turn the other side of the sandwich. You’ll know it’s good when both sides are crisp and golden brown.

3. Squash and Zucchini Tacos

1. Toss the squash and zucchini. Combine the zucchini and squash in a bowl, add the olive oil and spice mix, then toss together.

2. Grill the squash and zucchini strips. Heat the grill to medium-high and place the squash and zucchini on it. Sear all sides of each piece until cooked and crisp. Put on a platter.

3. Prepare the sauce. Peel and chop the avocados and mash in a bowl together with lime juice and salt.

4. Grill the tortillas. Heat the tortillas on the grill for one minute. Make sure you get those nice grill marks.

5. Assemble your tacos. Spread the avocado-lime mash on the tortillas and then put around 3-4 strips of the zucchini and yellow squash on each.

6. Top off with garnishes. Set out bowls of cheese, cilantro, and onions. You can use these to garnish your tacos. Serve and enjoy.

4. Sriracha Grilled Chicken

This sweet chicken recipe serves up a nice kick thanks to the Sriracha sauce.

1. Prep the grill. Preheat the grill to 400 degrees Fahrenheit.

2. Make the sauce. Add butter to a small saucepan and melt over low-medium heat. Once the butter melts, add the garlic and ginger and stir until you smell their aroma. This will take around a minute. Add the paprika, Sriracha, honey, ground cloves, lime juice. Let simmer for 4 minutes.

3. Prepare the chicken. Pat the chicken thighs dry. Rub both sides of each piece with salt and pepper.

4. Chicken grilling time. Spray the grates with cooking oil or wipe with a cloth soaked with olive oil. Place the chicken thighs with the skin down first. Grill each side for 4-5 minutes. After these first two turns, keep cooking the chicken and flipping each side every 3 or 4 minutes or so to avoid burning one side. Once the meat reaches an internal temperature of 165 degrees Fahrenheit, it’s good to go. This can take around half an hour of grilling time.

5. Brush the chicken with the sauce. Take the honey-sriracha sauce and brush each side of the chicken for the last 5 minutes of grilling time. Remove the grub from the grill and serve.

5. Whiskey and Vanilla Marinated Pork Chops

This recipe packs a little heat and sweet with your pork chops.

1. Make the brining solution. In a bowl, mix the bourbon, 1/4 cup of salt, 3 tablespoons of brown sugar, molasses, and vanilla extract with 2 cups of warm water. Stir in some ice to cool the brine to 45 degrees Fahrenheit.

2. Brine the chops. Put the chops in a baking dish and pour the brine over them. Make sure the brine covers the chops. Cover the dish with plastic wrap and chill in the refrigerator for 3-4 hours. Thick pieces of meat should stay there for a max of four hours while thinner pieces can chill for 3 hours instead.

3. Make the spice rub. Mix 1 tablespoon of the dark brown sugar, 1 tablespoon of the kosher salt, Hungarian paprika, black pepper, sage, dry mustard, cumin, cayenne, coriander, ginger, and cinnamon in a small bowl. Sprinkle 2- 3 spoonfuls of this mixture on the meat and rub it all over them. You can use the rest for future recipes.

4. Now grill the chops. Prep the gas or the charcoal grill. If you’re using charcoal, remember to place all the coals on just one half of the grill. Place the chops over the direct heat and grill each side for two minutes or until those nice grill marks sear each side. Place the chops on the side of the grill where there are no coals or on the cooler side. Cover the grills and make sure the temperature inside reaches a steady 140 to 145 degrees Fahrenheit. Cook each side for 4-5 minutes. When it’s done, put the chops on a platter, cover with foil, and rest for 5 minutes before serving to let the juices settle into the meat.

6. Cedar Smoked Grilled Salmon

Nice woody notes make this encounter with salmon an especially delicious one.

1. Use a cedar plank for grilling. Soak the plank in water for a couple of hours. The plank will lend cedar notes to the salmon once you start grilling.

2. Heat the grill and prep the ingredients. Preheat the grill to medium-high heat. In a bowl, mix the sugar, paprika, lemon zest, half a teaspoon each of salt and pepper.

3. Grill the salmon. Rub the salmon with the spice rub and place it on the cedar plank with the skin down. Place this on the grill and cover for 25 minutes for medium-well. Cook longer if you want more doneness.

3. Grill the ribs. Now, start placing the ribs on the grill with the bony side down in the empty area of the grill. Cover the grill and open the vents (if any). Wait until the meat browns and turns tender. This whole process can take an hour to an hour and a half.

5. Brush the meat with the glaze. Open the grill and brush the top face of the meat with the glaze. Cover and wait for 2 minutes. Open the grill and brush again. Do this until the glaze sticks on the meat.

6. Final touches. After 15 minutes of touching up the meat with the glaze, open the grill, remove the meat, and brush again with the remaining glaze. Let the meat cool down for a couple of minutes before cutting in half and serving.
